The balancing siphon coffee maker is an elaborate device for making coffee.  It is both beautiful to look at and loads of fun to brew a perfect cup of coffee with.

Even though it is not a common sight in most kitchen, the Balancing Siphon coffee maker has been around for more than 150 years.  Personally, I think it is a great example of a device that is both aesthetically pleasing and amazingly functional.

The principle of a Balancing Siphon coffee maker is simple.  It consists of two chambers placed side by side.  On one side is the brewing glass jar (for ground coffee) and the other a metal canister (to boil water).  The metal canister is sealed, except for a straw-sized pipe which passes from the base area of the metal sanister into the filter end at the lower part of the coffee brewing glass jar.  Water is heated in the metal canister to boiling. The heating process creates steam pressure which forces hot water through the pipe and into the brewing glass jar where the ground coffee sits.  When all the water has passed into the brewing vessel in this way, the metal chamber becomes lighter and lifts up thereby causing the burner cover to drop.  This causes the fire to be extinguished.  As the metal container cools, it creates a vacuum which pulls the freshly-brewed coffee back into the metal container.  The result is perfectly filtered coffee brewed at the optimum temperature of just below boiling point.  The advantage of this process is that since the heat is never directly applied to the coffee, the coffee can never be burned in the brewing process, thus producing a truly smooth cup of coffee.

Directions for use:

• Place the ground coffee in the glass jar.
• Add boiling or hot water into the metal chamber.
• Light the alcohol burner to continue heating the water. (Use soot free denatured alcohol, ethyl or an ethyl / isopropyl mixture that's high on the ethanol side.  You can get this at hardware or outdoor stores.)
• As the water boils, it flows through the pipe and into the jar with the coffee grounds.
• The water is just below boiling when it mixes with the ground, which is just ideal for excellent coffee.
• The water chamber will eventually boil empty, and the balanced lever will tip the canister and put out the burner.
• The coffee brews in the glass jar.
• The metal canister cools and creates a vacuum.
• The coffee is then sucked back to the metal canister through the pipe from the glass jar.
• Pour the coffee from the spigot at the bottom of the metal canister for a perfect cup of coffee
